Who doesn’t love tomato soup? Soups and salads are the safest bet when you want to improve your diet. And even without adding the delicious cream, vegetable soup can still be tasty and filling.
I went for tomatoes and carrots because I love how they taste. Also, the extra carrots give it more substance, so you don’t feel like you just drank juice for lunch.
Tomato Soup Ingredients
The homemade tomato soup doesn’t need a strict recipe; you can use a few vegetables you like to give it consistency and then add tomato paste or juice. You can season with salt, pepper, and even herbs if you feel like it.
I wanted a tomato basil soup because it’s a particularly tasty combination. And I used some frozen mixed soup vegetables, fresh carrots, and store-bought tomato paste. Once cooked, I blended it until the right texture.
Fresh or Canned, Tomatoes are great!
If you want to use fresh tomatoes, you need to remove the seeds and the skin, so it takes a bit longer. And if you use fresh ones, you can also opt for a roasted tomato soup – the flavor will be even better.
But there’s nothing wrong with making your tomato soup with canned tomatoes if you are busy or just simply feel it’s easier.
Either way, it’s still an easy vegetable soup that goes well with some croutons or a slice of whole-grain bread. Or just have the soup without any addition if you want something tasty to warm you up on a cold day or after long working hours.
Due to the added carrots, this soup may be a bit more orange than you’re used to. But it’s creamy and filling and doesn’t add unnecessary calories to your daily intake.
