This may not be the first combination that comes to mind when you think of spinach, but I find it excellent. The baby spinach and strawberry salad is extremely healthy, mixing nutrients from two superfoods into a tasty and fresh meal.

Some versions of this homemade salad include a bit of cheese, but I left it out this time. As much as I love cheese, I think almonds are more than sufficient, and I didn’t want to add more calories than necessary.

You can add whatever ingredients sound appealing, leading the taste to what your palate desires. Finely chopped red onion, pecans, poppy seeds, feta cheese, are all excellent options.  You can also combine the baby spinach with arugula or other greens, whatever works for you.

Since I wanted to keep it simple and diet-friendly, I skipped the extra ingredients, and it still tastes fresh and yummy. So I’ll keep the lovely feta for another salad.

I topped my baby spinach and strawberry salad with a strawberry salad dressing. It may sound a bit too much, but it worked really well. This healthy salad dressing combines strawberries with basil and olive oil, and the result is surprisingly tasty.
